  • 1 cup warm milk (whole or 2%)

5. Second Rise

Repeat the stretch-and-fold process once more.

If needed, extend fermentation until fully proofed.


6. Shape the Muffins

Lightly flour your surface and sprinkle cornmeal.

Roll dough to ½ inch thickness.

Cut using:

  • or glass rim

Re-roll scraps and cut remaining muffins (you’ll get around 24).

Place on a cornmeal-dusted tray.


7. Cook on Griddle
