Ingredients

  • 2 chicken breasts (cut into small pieces or shredded)
  • 1 tbsp olive oil
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup cream cheese
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup spinach (fresh)
  • 1/2 cup white beans (optional)
  • 1 tsp Italian seasoning

  • Salt & black pepper (to taste)
  • 1/4 cup grated Parmesan cheese

  1. Cook Chicken
    Heat oil in a pot. Add chicken β†’ cook until lightly golden. Remove and set aside.

  3. Build the Chili

  5. Add Chicken & Extras
    Return chicken to pot. Add beans (optional).
    Let it simmer for 8–10 minutes.
  6. Finish
    Add spinach β†’ cook until wilted.
    Stir in Parmesan cheese.
