- 2 chicken breasts (cut into small pieces or shredded)

- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup cream cheese
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup spinach (fresh)
- 1/2 cup white beans (optional)
- 1 tsp Italian seasoning
- 1/2 tsp chili flakes (optional π₯)
- Salt & black pepper (to taste)
- 1/4 cup grated Parmesan cheese

- Cook Chicken
Heat oil in a pot. Add chicken β cook until lightly golden. Remove and set aside. - SautΓ© Base
In the same pot, add onion β cook until soft.
Add garlic β sautΓ© for 30 seconds. - Build the Chili
Pour in chicken broth β bring to a simmer.
Add sun-dried tomatoes, Italian seasoning, salt, and pepper. - Make it Creamy
Add cream cheese and heavy cream β stir until smooth and creamy. - Add Chicken & Extras
Return chicken to pot. Add beans (optional).
Let it simmer for 8β10 minutes. - Finish
Add spinach β cook until wilted.
Stir in Parmesan cheese.
