Blueberry Cream Cheese Loaf (Unique Version)

Ingredients

For the loaf:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup soft butter
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1½ cups fresh or frozen blueberries

For the cream cheese filling:

  • 200g cream cheese (soft and smooth)
  • ¼ cup sugar
  • 1 egg
  • ½ tsp vanilla extract

👩‍🍳 Method

🔥 1. Prepare oven

Preheat your oven to 180°C (350°F).
Lightly grease a loaf pan or line it with baking paper.


🥣 2. Dry mix

In a bowl, whisk together flour, baking powder, baking soda, and salt until evenly combined.


🧈 3. Make batter

In another bowl, beat butter and sugar until the mixture becomes light, soft, and creamy.

Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract for flavor.

Now gently combine dry ingredients and milk, alternating between both until you get a smooth batter.

👉 Carefully fold in the blueberries at the end.


🧀 4. Cream cheese filling

In a separate bowl, mix cream cheese, sugar, egg, and vanilla until silky and lump-free.


🧁 5. Layer the loaf

Pour half of the batter into the prepared pan.
Spread the cream cheese mixture evenly on top.
Cover with the remaining batter.

(Optional) Use a knife to lightly swirl the layers for a marble effect.


🔥 6. Bake

Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.


❄️ 7. Cool & serve

Let the loaf rest in the pan for 10–15 minutes, then transfer to a rack.
Slice and enjoy once fully cooled.
